Curry of Beef Zanzibar®

INGREDIENTS

1 cup onions, finely chopped
1 clove garlic, crushed
1 teaspoon salt
1 teaspoon turmeric
1/4 teaspoon chili powder
1-2 teaspoons curry powder
4 tablespoons vegetable oil
2 pounds chunks of beef, cut in 3/4" cubes
2 cups water
4 tablespoons lemon juice
2 tablespoons cornstarch

PREPARATION

1. In a 4 quart saucepan, sauté onions and garlic with the vegetable oil
2. Add salt, turmeric, chili powder, and curry powder to mixture
3. Once onions are soft add the beef and sauté lightly but do not permit the meat to brown.
4. Add the water and lemon juice and cover tightly and allow to simmer for 1 hour.
5. If the sauce appears thin, thicken it with the cornstarch.

SERVE Serve with rice/pilau

 

Matoke (plantains and meat)®


INGREDIENTS

8-10
plantains
1 lemon, freshly squeezed
oil for frying
1 onion, chopped
2-3 tomatoes, chopped
1 sweet green pepper, chopped
4 cloves of garlic, crushed
1 chili pepper, chopped
salt to taste
coriander, cayenne pepper (to taste)
1 lb. ground beef or stew meat cut in bite-sized pieces
2 cups beef stock

 

PREPARATION

1
. Peel the plantains, cut into cubes, sprinkle with lemon juice, and set aside.
2. Heat oil in a large pan.
3. Fry the onion, tomatoes, green pepper, hot pepper, and garlic together.
4. Add spices to taste. Add meat and broth.
5. Continue frying and stirring until the meat is nearly done or until the broth is starting to boil.
6. Reduce heat. Add plantains.
7. Cover and simmer over low heat until plantains are tender and meat is done.


SERVE Serve as is with scotch bonnet peppers.
